Vinification: The grapes are harvested early in the morning to maintain maximum freshness. After soaking with the skins for five days to extract colour and taste, the wine is fermented in stainless steel. After fermentation, the wine partly matures in oak barrels.

The Cabernet-Sauvignon, deep red, full-bodied wine, is suitable for those preferring strong, tasty, aged wines.

After being aged in oak barrels, the wine stays in the bottle to develop the strong aromas of vanilla and exotic spices that characterise it. Deep ruby colour. Nose: rich black berries, cherry, some flavor notes, cinnamon, a bit of oak. Gently soft in the mouth, soft tannins, moderate acidity, easy drinking.

Best with grilled meat & matured cheese & accompanying heavy meals with sauces and spices.

Barba Yiannis is an excellent expression of the Maratheftiko variety. Robust, with ripe fruit and character, it has at the same time a velvety dimension in the mouth, excellent levels of concentration and beautiful complexity. Old vineyards at an altitude of 800-1150 meters and the careful use of old barrels lead to a wine that highlights the noble dimension of the variety. Although Mavro dominates the vineyard of Cyprus, Maratheftiko is the “pride” of the red Cypriot varieties. Barba Yiannis has cherry and black fruit aromas on his nose. The wine will mature in old oak barrels for a short time, keeping the exceptional interest in the fruit and its excellent structure.

Nerello Cappuccio – Nerello Mascalese is a blend of two very Sicilian grape varieties. Together they are the mainstay of quality red wines from Sicily`s east coast and have long been a popular choice for wines made under the Sicilia DOC. The pair are in fact two mutations of a single variety, although the original archetypal Nerello is rarely referred to in ampelographic literature.

Grapes selected from vineyards located on the North, South-east, and South-west slopes of Mount Etna.

Nerello Mascalese (c.80-85%), Etna’s noble red grape variety, and Nerello Cappuccio (c.15-20%) are grown on sandy, volcanic soils that are rich in minerals, with sub-acid reaction. Vines range in age from 10 to 60 years and are trained in both “alberello” (head-trained bush) and spurred cordon systems, with densities of 6,000 to 8,000 vine stocks per hectare and yields of 7,000 to 8,000 kg/ha. Vineyards vary in elevation from 450 m to 900 m  a.s.l. The climate type ranges from high hill to mountain, with a humid and rainy cooler season, high ventilation, luminosity, and a significant diurnal range.

Tasting Notes: 
Balanced, dry, medium-bodied, mineral with a pleasant acidity
and saline notes, red fruit aromas, persistent. 

Food Pairing: A very versatile wine to be paired with white and red meats and cheeses but also with fish.

A unique wine made out of one of the few last remaining centenarian vineyards on the island, planted in 1921. Organic certified since 2019, we tend these old bush vines with great care. The vineyard contains 6 different indigenous varieties, which produce this elegant ruby red coloured wine with intense aromas of black currants, red pepper and preserved red fruits.
